Yeast-Free Waffle

So here you are trying to lead a healthy lifestyle. Fewer carbs. Less sugar. More veggies. Some of you may even be following the yeast-free eating program. You've exhausted yourself of scrambled eggs, turkey bacon and a protein shake for breakfast. Though you love them, they just aren't cutting it anymore. Bottom line: you need more breakfast options. Don't worry... We hear you! Yeast-Free Waffles *makes 1 large waffle Ingredients: 1 C oat or almond flour - 2 eggs
- 1/4 C water (for puffier pancakes, use sparkling water)
- 1 1/2 T coconut oil (melted down)
- 1/4 t sea salt
- 1 T Sweet-n-Natural
- 1/2 t aluminum-free baking powder
Instructions: Mix all ingredients together in a medium-sized bowl. Lightly coat your waffle maker with olive oil cooking spray to prevent sticking. Pour about 3/4 C batter into waffle maker (depending on size) and cook until golden brown on both sides.

Waffles need syrup. My solution... 2 tsp. Sweet n natural, about 2 tbls water and a splash of vanilla. Boil it. Pour over the waffle. It was pretty tasty.

I make a savory Indian-style pancake that I love for breakfast or lunch...or even for a light dinner. I created this recipe the last time I did the yeast-free program and I found it to be a real life saver at least until I could get through to the fruit phase. I make it the night before so it's ready to go for breakfast.
Besan Puda (Indian Name)
Garbanzo Bean Flour Pancake / Tortilla
1 C garbanzo bean flour (I use Bob's Red Mill)
1/4 C oat flour (Bob's again)
3/4 t sea salt
1/2 t groun

How do you melt down the coconut oil? Can it be done in the microwave or just on the stovetop? Thanks in advance :)

.Zucchini Besan Puda cont'd. After salt add: 1/2 t cumin powder, 1/8 t cayenne, 1/2 t ajowain seeds (use celery if no find) 1/2 t baking soda, 1/3 c grated red onions, 1 C grated zucchini,chopped cilantro, 1 C water enough to make pourable batter. Mix dry, add wet. Let rest a few. Coat nonstick w/coco oil. make pancakes cooking through then flip. Search besan Puda for videos. Enjoy!
