Yeast-Free Pancakes

Yes, you read the title correctly!
 
We took all of our favorite pancake recipes, tweaked them a little here, added a little there and came up with our very own yeast-free pancake!
 
They’re fluffy, tasty and packed with protein to help you stay fuller longer!
 
 
Ingredients:

• 1/3 C oat flour
• 1 ½ T ground flaxseeds
• 1 T Sweet-N-Natural
• ¾ scoop vanilla whey protein powder (We like Jay Robb’s!)
• 1 egg
• ¼ C plus 1 T unsweetened vanilla almond milk
 
Instructions:

1. In a small mixing bowl, stir in all ingredients and mix well.
2. Heat medium-sized pan on medium to high heat. Coat with a thin layer of coconut oil to prevent sticking.
3. Pour mix into pan to make a 4 to 5 inch pancake. (Or your desired size.)
4. When the mixture starts to bubble on top, flip and allow the other side to cook.
5. Cook both sides of the pancake until golden brown.
6. Top with your favorite nut butter and/or fresh fruit spread of your choice in place of syrup.
7. Serve and enjoy!

You can also enjoy maple syrup with your pancakes. 1 part water, 2 parts xylitol (Sweet & Natural). Heat to dissolve the xylitol and add maple flavoring to suit your taste. It is especially yummy if served warm.

I use fresh or frozen strawberries and blueberries, heated and mixed together will a touch of sweet and natural and it makes a great topping for pancakes.

pancakes are great, i added chopped pecans, made 2 recipes, froze some.

Delicious recipe. I wasn't sure how they would turn out, but they were fantastic. I put a few frozen blueberries in each pancake as they were cooking. I also used brown rice protein powder instead of whey because I have a moderate intolerance to it and dairy products. Thanks for the great yeast-free recipes and ideas.
