Yeast-Free Coffee Cake
 Just because you're eating yeast-free doesn't mean you have to completely deprive yourself!
We stumbled upon this recipe and just couldn't pass it up without tweaking it to become a more healthy treat!
After a few different versions, we {think} we have come up with the perfect combination for those of you on a yeast-free eating program and we promise...it does not disappoint!
We're not sure if we love this new recipe because it's so delicious or because it's pretty easy and makes exactly one serving, rather than an entire cake!
Yeast-Free Coffee Cake
Batter ingredients: - 3 T oat, garbanzo or black bean flour (coconut flour and almond flour did not work well for this recipe)
- 1/4 t aluminum-free baking powder
- 1/16 sea salt
- 1 T Sweet-n-Natural
- 1 T & 2 t water
- 2 t unsweetened applesauce or butter (or if not allowed yet, you can use 2 t coconut oil)
Topping ingredients: - Preheat oven to 330 degrees
- For batter ingredients, combine dry ingredients in mixing bowl and mix well.
- Add wet ingredients to dry ingredients and mix well.
- For topping ingredients, combine all ingredients in small bowl and mix well.
- Set the topping to the side and pour your batter into the small ramekin or coffee mug.
- Using a fork, place the topping on top of the uncooked batter in your ramekin and spread/sprinkle it over the top of the batter.
- Bake for 15-18 minutes, or until toothpick comes out clean.

Better recipe! I just used the Magical Moist Almond cake recipe on the back of the Almond flour bag. I changed the sugar to Erithritol and the better to coconut oil and the milk to coconut or almond milk. I make them in muffin tins the whole recipe makes about 14 muffins. And you can add nuts or blueberries if you want. The Garbanzo flour has a really weird flavor!

I tried a blueberry flavored applesauce that they sell at the HEB by me. It has no sugar added, natural, etc. And it gave it a blueberry muffin taste.. Absolutely delicious in my opinion!
