Yeast Free Chicken Tortilla Soup
 Cut the tortilla strips and the cheese; enjoy this yeast free chicken tortilla soup! Ingredients:
- 4 cups water
- 4 cups organic chicken broth
- 3 large chicken breasts
- 4 tomatoes, diced
- 1 white onion, diced
- 2 cups sugar-free salsa
- 1-2 avocados, diced
- 1 cup cilantro, chopped
- Sea salt, to taste
- Pepper, to taste
- Cumin, to taste
Instructions:
- In large stock pot, add chicken stock to water and bring to a boil.
- Once water is boiling, add chicken breasts.
- Once chicken is completely cooked, remove chicken from stock to shred.
- Before shredding chicken, add diced tomatoes, onions, salsa, salt, pepper & cumin to boiling stock.
- Once chicken is shredded, add to pot and allow to simmer for 10-15 minutes.
- Top with diced avocados and enjoy!

I've added a can of black beans to this recipe and it is delicious! Extra fiber to keep me fuller longer! :)

Where do you find the chicken broth without yeast extract or sugar? Even the organic one I found at HEB had this. I could make this tonight if I could find the right broth. :-) Thanks!

Kitchen Basics broth does not have the sugar or msg. HEB's organic broths started adding sugar. I found that one out the hard way. We like to add squash too.

I'm new to cooking and I'm confused by these directions. #1 says "add bouillon cubes to water and bring to a boil" but there aren't any bouillon cubes listed in the ingredients section. And when do I add the 4 cups of chicken broth?

April, I believe the bullion cubes are to make the chicken broth (does that make sense?).
This is a tastey recipe. I like to add a big mound of thinly sliced cabbage on top. It adds a little crunch (like crunch of taco chips).

Socca bread would go great with this. You use garbonzo bean flour. It is on the blog spoonfulofsugarfree.

Found the chicken broth...thanks! Making this for dinner tonight. I'm going to bake my chicken rather than boil it (hubby hates boiled meat). I'll also try the black beans and some cilantro. Has anyone ever thickened their yeast-free soup with garbanzo flour?
