Yeast Free Almond Pound Cake

Yeast Free Almond Pound Cake : Who says you can't enjoy a little slice of heaven while doing the yeast free diet?!
Ingredients:- 1 cup butter
- 1 cup Sweet-n-Natural
- 5 eggs
- 2 cups almond flour
- 1 tsp. baking powder
- 1 tsp. lemon extract
- 1 tsp. vanilla extract
Instructions:- Preheat oven to 350 degrees F.
- Cream butter and Sweet-n-Natural well.
- Add eggs one at a time, beating after each.
- Mix almond flour with baking powder and add to wet mixture gradually while beating.
- Add lemon and vanilla extracts and mix well.
- Pour into 9 inch greased baking pan.
- Bake for 45-50 minutes.
*For extra antioxidants, add fresh strawberries and blueberries! Enjoy!

Since I'm in the first 2 weeks of the Yeast-Free program and I wanted a dessert, I made this recipe substituting the virgin coconut oil for the butter. It's pretty good!

I have looked but never found almond flour. Is it available at stores (if so where) or is it something that must be made at home?

Bob's Red Mill makes an excellent almond flour - I buy it by the case (4 pkg.) on Amazon.

I made this one for me and a "regular" for my husband and daughter. To much my surprise, they prefer this one for the moisture/taste. Who knew??!! I have to side it now.

There's butter in this recipe, it is not fit for a yeast-free diet.
Which is a shame, it sounds delicious! :(
