Tex Mex Chili
After a long day, it can be difficult to prepare a wholesome dinner that’s also quick and easy. Packed with protein and fiber, our Tex Mex Chili is a great meal for the whole family and can be fixed in a jiffy! 
- 1 1/2 lbs ground beef
- 1 bell pepper, chopped
- 1 medium onion, chopped
- 1 clove garlic, minced
- 2 cans Mexican Fiesta Rotel
- 3 (15 oz.) cans Progresso kidney beans
- 1 Tbsp. chili powder
- 1 can Hunt’s diced tomatoes (optional)
Brown ground beef, bell pepper, onion and garlic. Drain fat. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 30 minutes. Add one can of Hunt’s diced tomatoes if desired.

This is a fantastic recipe! But if you want to make it even better add 1 TBSP cumin and 1/4 cup or so of cilantro. Also, substitute bison (available at HEB) for the ground beef. It's very tasteful... even better than beef. The above additions make the chili even better. Mmm, mmm...good!

I use 1# pkg of buffalo meat from whole food, way more chili pwd. and generally made the recipe hotter with jalepenos.
