Sugar-Free Chocolate Cheesecake

Happy national cheesecake day!
 
We thought the best way to ring in this fantastic day of cheesecakeness would be to provide you all with a fairly easy, yet extremely delicious chocolate cheesecake.

What if we told you it was sugar-free and is less than 250 calories per slice? Does it sound any better?! Okay. Good!
 
Sugar-Free Chocolate Cheesecake
 
Crust Ingredients:
  • 2 C almond flour
  • 4 T butter or coconut oil, melted
  • 1/4 C vanilla whey or egg white protein powder (We like Jay Robb's!)
Preheat oven to 350 degrees. In a medium mixing bowl, combine almond flour, protein powder and butter and mix well. Grease a 9 inch pan with coconut oil and press crust mixture firmly and evenly along the bottom and sides of pan. Do not build crust too high up the sides, but be sure to cover the seam around the bottom of the pan. Bake on bottom rack for 12-15 minutes or until lightly browned. Removed crust from oven and let it cool while you make the filling.
 
Filling indredients:
  • 2 C cottage cheese
  • 2 eggs
  • 1/2 C Greek yogurt (We like Fage 0%!)
  • 2 oz unsweetened baking chocolate, melted
Preheat oven to 375 degrees. Put the cottage cheese, eggs and Greek yogurt in the blender; mix until smooth. Add the melted chocolate and Sweet-n-Natural and blend again. Pour into crust and place on the top rack of the oven. Place a flat pan of water on the bottom rack for moisture. Bake for 40-45 minutes. Cool, then chill before serving.
 
Makes 12 slices
Per slice: 230 calories, 18g fat, 6g saturated fat, 8g carbohydrates, 13g protein

What would be your suggestion to make this cheesecake vanilla instead of chocolate? (Not that I don't love chocolate!) Also, I think you meant to say yogurt, not sour cream in the instructions. Thanks for the recipes!!

It is a flan pan. You could use a well greased and floured springform pan also.
