Independence Day Parfait

Surely you've seen these cute, festive Fourth of July desserts scouring the pages of the internet lately. You know...the ones loaded with sugar and dairy but look oh-so-good?!
Well-leave it to us to find one we can actually tweak just a tiny bit to make it not-so-bad for your waistline!
Whereas a typical berry parfait recipe calls for cream cheese, powdered sugar and whipping cream, we've made a few substitutions that make this a dessert that anyone can enjoy without feeling guilty!
Independence Day Parfait
Ingredients:
- 1 pound strawberries, diced
- 12 oz. blueberries
- 10-15 oz Greek yogurt (We like Fage 0%)
- 1 scoop vanilla whey or egg white protein powder (We like Jay Robb's)
- 1/2 C sliced almonds
- 1 T natural honey, optional
Instructions: In a small mixing bowl, combine Greek yogurt and protein powder (and honey, if using). Stir well. To assemble parfaits, use parfait glasses, tall wine glasses or champagne flutes. Spoon 1" of blueberries into glass, top with a dollop of yogurt mixture, then spoon 1" of strawberries on top, followed by another dollop of yogurt. Spoon another layer of blueberries, another dollop of yogurt and top the parfait with a spoonful of strawberries. Garnish the top with a small dollop of yogurt and sprinkle sliced almonds over the top.
