Gluten-Free Meatloaf Balls

A simply delicious dinner option for those following a strict gluten-free diet, or even those following a modified yeast-free diet! Gluten-Free Meatloaf Balls *Makes about 30 balls Ingredients: 1 lb. lean ground beef 1/2 onion, finely chopped 1/2 fist-sized sweet potato, finely diced 1 clove garlic, minced 1 egg 1 tsp sea salt 1/2 tsp black pepper 1 T fresh parsley, chopped 1/4 C tomato paste
Instructions: Preheat oven to 375 degrees. Combine all ingredients together in a large mixing bowl. - Coat a baking sheet with coconut oil to prevent sticking.
- With a large spoon, evenly distribute the meat into meatball size balls.
- If you'd like, you can take some of the left over tomato paste and garnish the top of each meatball for an extra bit of tomato flavor.
- Bake for 15-20 minutes and enjoy!

I also love meatloaf and in place of the sweet potato I used crushed Blue Diamond brand Nut thins, pecan which is wheat and gluten free and no one can tell the difference between mine and mother's meatloaf. It is excellent.

These meatballs are fabulous! We had so many leftover that we chopped one up and added it to our Sunday morning omelet....it was really, really good!
