Garlic Shrimp Skewers

Ahhh! The sun is out. The weather is perfect. The last thing you want to do is sit inside for yet another meal.
Take dinner outside tonight with these yummy garlic shrimp skewers cooked on the grill!
Garlic Shrimp Skewers
Ingredients:

1 fat clove garlic, minced

1 1/2 tsp sea salt

1/2 tspcayenne pepper

1 tsp paprika
-
2 tbsp olive oil
-
2 tsp lemon juice
-
1 lb. large shrimp, peeled and de-veined

wooden skewers, soaked in water for 30 minutes before grilling
Instructions:

In a medium bowl mix all the ingredients, except for the shrimp, to make a paste.

Toss the shrimp with the sauce in the bowl until coated and set in the refrigerator, covered with plastic wrap. Marinate for 2 hours.

Preheat the grill to medium heat and lightly oil the grill grate with coconut oil to avoid sticking.

Place shrimp on skewers and cook on the grill for 2 to 3 minutes per side or until opaque.

When done, take the shrimp off grill, serve with mixed vegetables and a fresh salad and enjoy!

For those of us that are vegetarian or vegans, I would love to see more of vegetarian/vegan ideas for dinner --- particularly yeast free diet acceptable meat substitutes. Unfortunately, about 80% of the recipes in the book I received included, meat, dairy or eggs.... all of which I try to avoid. Thanks
