Chickpea Taco Salad

Last week we added a "Roasted Chickpea" recipe to our library. This week, we're taking that recipe and adding a few steps to create a delicious chickpea taco salad! Chickpea taco salad is not only delicious, but it's a great option for those trying to consume less meat or follow a strict vegetarian diet.
 
We promise...this recipe does not disappoint!
 
 
Taco seasoning:
  • 1 T chili powder
  • 1/4 t garlic powder
  • 1/4 t onion powder
  • 1/4 t crushed red pepper flakes
  • 1/4 t dried oregano
  • 1/2 t paprika
  • 1 1/2 t ground cumin
  • 1 t sea salt
  • 1 t black pepper
Roasted chickpeas:
  • 1 t coconut oil (liquified)
  • 2 1/2 C canned chickpeas, drained and rinsed
  • 2 tbs taco seasoning (recipe above)
Taco salad:
  • 2-3 heads romaine lettuce
  • 1 bunch green onions, chopped
  • 2 green bell peppers, chopped
  • 2-3 tomatoes, diced
  • 1-2 avocadoes, diced
  • Black beans, cooked
Instructions:
  1. Preheat the oven to 400 degrees.
  2. Mix all taco seasoning ingredients together in a medium sized mixing bowl. Combine liquified coconut oil and chickpeas to taco seasoning mixture. Toss the chickpeas in coconut oil/taco seasoning mixture until fully coated. 
  3. Put the chickpeas on a baking sheet in a single layer and bake for 45 minutes, stirring often.
  4. While chickpeas are roasting, put together your salad using your favorite taco ingredients listed above.
  5. Remove chickpeas from oven and top your salad with them as your meat substitute.
  6. Top with your favorite salsa, olive oil or lemon/lime juice.
  7. Serve & enjoy!
