Black Bean "Burgers"
Although red meat sometimes tastes good, it's really not something you should eat all that often. It doesn't digest well, it contributes to many different ailments and disease states and is just not the first thing you should go to when you think of food.
While turkey burgers are a much healthier alternative, sometimes it's good to give your body a break from meat altogether, whether you're a vegan, a vegetarian or a pescatarian.
Black bean burgers are perfect for anyone trying to follow a meatless diet. They're packed with fiber and delicious herbs and are so light on your stomach, you don't get that heavy, bloated feeling after you eat them!
Black Bean "Burgers"
Ingredients:

1/2 medium yellow onion, chopped

1 tbsp chopped garlic

2 (15-ounce) can of black beans, rinsed, drained and divided

2 tbsp chopped cilantro

1 tsp chopped parsley
-
1 egg
-
1 tsp red pepper flakes

1/2 C rolled oats
-
Sea salt & pepper to taste
Instructions:

Heat a pan over medium-low heat.

In a food processor, pulse onion and garlic until finely chopped. Add 1 can of black beans, cilantro, parsley, egg and red pepper flakes to pulse and combine.

Transfer mixture to a large mixing bowl, add the remaining can of black beans and the rolled oats and pulse to combine.

Divide mixture into 4-5 portions and form patties.

Coat bottom of pan with coconut oil and cook each patty for about 6 minutes on each side on until heated through.

Top with lettuce, tomato and onion. (No bun, if yeast-free)

*Makes about 4-5 patties

I feel much heavier and bloated after eating starch (yes, even beans) than after eating meat! What is a good alternative for people who must eat a low carb diet? I love salad but sometimes would like a change.
