Applesauce Cupcakes

What better way to show mom a little TLC this Mother's Day than to completely take over her kitchen and bake her healthy, yummy treats?
 
We're here to get you started with a delicious and fairly simple cupcake recipe.
 
And the best part about them? They're guilt-free!
 
You didn't think we'd actually let you bake those chemical-infested pre-packaged cupcakes, did you?!
 
 
Applesauce Cupcakes
*Please note: this is not a yeast-free recipe
 
Ingredients:
  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup butter
  • 2 eggs
  • 2 1/2 cups oat or almond flour
  • 1 tsp groud cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/4 tsp ground nutmeg
Instructions:
  1. Heat oven to 350 degrees. Line 24 regular-size muffin cups with paper baking cups.
  2. In large bowl, beat Sweet-N-Natural, applesauce, softened butter and eggs with electric mixer until smooth and creamy.
  3. On low speed, beat in flour, cinnamon, baking powder, baking soda, salt and nutmeg until well blended.
  4. Divide batter evenly among muffin cups.
  5. Bake 25 to 35 minutes or until toothpick inserted comes out clean.
  6. Remove from muffin pan and allow to cool for at least 30 minutes
**Optional icing:
 
Ingredients:
  • 1/3 cup butter
  • 3 cups powdered sugar or powdered Sweet-N-Natural (to powder Sweet-N-Natural, put 3 cups in coffee grinder or small blender. Blend on high until smaller granules are formed.)
  • 2 tsp vanilla
  • 3-4 tbsp skim milk
Instructions:
  1. In 3-quart saucepan, melt butter over medium heat.
  2. Cook 3-5 minutes, stirring constantly and watching closely until butter begins to turn golden.
  3. Remove from heat and allow to cool for 15 minutes.
  4. With hand mixer on low speed, beat in powdered sugar, vanilla and enough milk until icing is smooth. (Add 1-2 tsp of milk if icing begins to harden and continue mixing.)
  5. Spread frosting on cooled cupcakes.
  6. Serve & enjoy!
